The New York City Influence

In the 1970s, Chef Tsung Ting Wang, executive chef and part-owner of New York City’s Shun Lee Palace, traveled to Taiwan in search of inspiration. There, he encountered Chef Peng’s General Tso’s Chicken and was captivated by its unique flavors.

Wang brought the dish back to New York City and introduced it to his own restaurant, Hunam. He made several modifications to suit American palates: he added a crispier batter to the chicken and sweetened the sauce.

The Americanization of General Tso’s Chicken

The popularity of Wang’s version of General Tso’s Chicken skyrocketed, and it soon became a staple in Chinese restaurants across the United States. However, many diners mistakenly believed that Chef Peng was the one who had adapted the dish, not realizing that Wang had actually borrowed it from Peng’s original creation.

Over time, even Chef Peng adapted his own recipe to cater to American tastes. He reduced the spiciness and added sugar to the sauce, transforming the dish into the sweet and sour favorite we know today.

General Tso’s Chicken Today

General Tso’s Chicken has become so popular that even chefs in Hunan Province, China, have begun incorporating it into their menus as a “traditional” dish, despite its American origins. The dish has undergone a remarkable evolution from its humble beginnings as a Hunanese delicacy to a beloved takeout staple enjoyed by millions worldwide.

Today, General Tso’s Chicken exists in countless variations, each with its own unique spin on the classic recipe. Some chefs experiment with different spice levels, while others add their own creative ingredients.
